Breakfast (not pictured) ended up being pretty late in the morning, so I just made a simple, light smoothie with frozen mango, a banana, skim milk, and nonfat plain yogurt blended with ice. This was ~250 calories
For lunch I wanted something different that I don't get to eat during hectic weekdays. I rummaged around in the cabinets and freezer and came up with a frozen veggie burger, which I love. I always forget I have these, because once I stick things in my freezer, they sort of disappear. I had some veggies on the side, which I sprayed with some (expired) lowfat dressing. I'm still alive. I'll probably toss it sometime soon. I also had a popsicle. ~340 calories
I had a a lowfat chocolate popsicle thing for a snack this afternoon. I probably could have eaten the entire box, but then would have to go buy more, and I don't really have any time to go to the store until next weekend, and I can't survive for the rest of the week without chocolate.
For dinner I made turkey sausages with sauteed peppers and onions. I cooked the sausages in a skillet with no added fat and cooked the veggies in another skillet with a spray of olive oil. I put a little olive oil in a spray bottle because it's easier to coat the pan with less oil. I had a sausage on a roll with the pepper/onion mixture and a little bit of mustard. I also had a salad on the side with some fat free italian dressing.
For dessert I had another chocolate popsicle. Bordering on loss of control with these things...
Dinner + 2 chocolate popsicles was about 600 calories.
